Sift dry ingredients. Add nuts. In separate bowl, mix beaten egg with applesauce and melted shortening. Stir in dry ingredients. Pour into 8x4x4 pan. Sprinkle extra walnuts on top if desired. Bake for 1 hour at 350 degrees.

My material grandmother clipped this one out of a newspaper decades ago, and it’s been a family favorite since. Stir by hand for best results.

2 c. sifted flour
¾ c. sugar
3 t. baking powder
1 t. salt
½ t. baking soda

½ t. cinnamon

1 c. coarsely chopped walnuts (plus more to sprinkle on the top if desired)

1 egg, beaten

1 c. medium thick applesauce

2 T. melted shortening
