Walnut Brownies

Featured in: "Firefly Season"

These are sort-of-healthy, as applesauce substitutes for some of the sugar and butter. The texture is moist and cake-like, and the hint of cinnamon pairs well with the cocoa. Can't get enough chocolate? Stir an extra handful of chips into the batter before you spread it in the pan.

1 ½ c. sugar

2 eggs

½ c. butter or margarine, melted

2 to 4 T. unsweetened cocoa powder (I like more, rather than less)

½ t. salt

2 c. applesauce

1 t. baking soda

½ t. cinnamon

2 c. flour

1 c. chocolate chips

1 c. chopped walnuts

Preheat over to 350 degrees. Mix sugar, eggs and melted butter in a large bowl. Add salt and cocoa. In another bowl, sift the baking soda and cinnamon with the flour. Alternate adding the flour mixture and the applesauce to the wet ingredients. Spread batter in greased brownie/jelly roll pan (10-by-15 inches). Sprinkle with chocolate chips and chopped walnuts. Bake for 30 minutes.
